Watermelon Salad + Balsamic Glaze (Gluten free)
Ingredients
- 2 cups seedless watermelon diced into 1” cubes
- 5 oz baby arugula
- 3 Tbsp extra virgin olive oil EVOO
- 2 Tbsp fresh lemon juice
- 1 ½ cups balsamic vinegar
- ¼ cup monk fruit sweetener or sweetener of choice
- 2 Tbsp pistachios shelled and roughly chopped
- ¼ cup feta cheese crumbled
- Sea salt and pepper to taste
Instructions
- In a small pot over medium heat, add balsamic vinegar and monk fruit sweetener and stir with a wooden spoon to combine. Bring to a simmer and allow to simmer over medium low heat for 10-15 minutes until the mixture thickens up to a molasses (syrup) consistency. Pour into a heat proof cup or bowl and set aside to cool.
- In a large bowl, add EVOO, lemon juice, a pinch of sea salt and pepper, then whisk until the dressing is emulsified. Add arugula and toss to combine.
- On a large plate spread salad evenly then then layer with chopped watermelon, feta cheese, pistachios, and drizzle balsamic glaze. Enjoy immediately!
