It’s been cold and rainy here in the Bay Area lately, and my time in the kitchen has been very limited due to the nature of my current work situation. So I put together the perfect comfort food dish that’s full of all the goodness you need in your life right now, and even better – can be made in 30 minutes! This soup is creamy and filling and includes super basic ingredients that hopefully you already have at home.

Mediterranean Chicken & Rice Soup
A creamy, hearty soup that can be made in 30 minutes or less!
Equipment
- large heavy pot
- Wooden spoon
- Cutting board
- Knife
- strainer or colander
Ingredients
- 2 tbsp avocado oil
- ½ red onion, diced
- ¾ cup white rice I used Jasmine rice
- ½ tsp sea salt plus more to taste
- ¼ tsp black pepper
- ½ tsp ground turmeric
- ¼ tsp ground cardamom
- ½ tsp dried thyme
- 2 cups chicken bone broth or chicken broth
- 1 ½ cups filtered water
- 2 cups leftover chicken diced (I used chicken thighs)
- 2 cups baby spinach, chopped
- 15.5 oz canned garbanzo beans, rinsed and drained
- ½ lemon, juiced
- Fresh parsley for garnish (optional)
Instructions
- In a large, heavy pot over medium heat, add avocado oil.
- Add onions and cook until tender, then add the rice and all the dried seasoning and mix to combine with a wooden spoon for 1-2 minutes. Be sure not to burn the ingredients and continue to mix.
- Add bone broth and water to the pot and mix to combine. Turn the heat up to medium-high and bring the broth to simmer. Cover with a lid and turn the heat down to medium-low and allow the rice to cook, which should take 8-10 minutes depending on the type of rice used.
- Once the rice is cooked add the chicken and spinach and turn the heat down to low. Cook for about 5 mins, then add fresh lemon juice and stir to combine.
- Serve warm and garnish with chopped parsley.
