Good food doesn’t need to be complicated in order to taste good. And just because this meal can be prepared in 30 minutes or less doesn’t mean that we’re skimping out on flavor either. If you’re using good quality products and fresh ingredients (especially those in season, like the asparagus described in this recipe), you’ll start to notice the quality in flavor with simple ingredients.
I’m in charge of the cooking in my house (in case you haven’t noticed), and now that I’m working full-time again, I need to make easy, tasty, and nutritious meals in a hurry. And this recipe came about as I was rushing to put something together for lunch before my next meeting. This recipe turned out so good, that I had to share with all of you!
This recipe is super versatile, and you can use whatever sausage and vegetables you have in the fridge. This dish is creamy, with a hint of umami from the tomato sauce, and the apple gouda sausage I purchased from Butcher Box paired with fresh asparagus compliment each other so well. Creamy Tomato Pasta with Apple Gouda Sausage & Asparagus
Equipment

Ingredients
- 12 oz gluten free spaghetti I used Trader Joe’s Organic Yellow Lentil & Brown Rice Pasta
- 1 cup Pasta water reserved from boiled noodles before draining
- 2 tbsp avocado oil
- ½ red onion, chopped
- 1 bunch asparagus, diced
- 8 oz baby cremini mushrooms, stems removed and sliced into quarters
- 12 oz Apple Gouda Sausage, diced into small cubes
- 1 tsp garlic powder
- 25 oz Organic Marinara Sauce
- ½ cup dairy free sour cream I used Kite Hill
- ½ cup Violife vegan mozzarella cheese cow’s mozzarella cheese works too!
- Salt & pepper to taste
- Parsley for garnish
Instructions
- Cook pasta according to package instructions.
- In a large heavy pot over medium heat, add avocado oil.
- Add onions, asparagus, mushrooms, sausage, and garlic powder, and cook for 5-8 minutes or until veggies are tender and meat has browned.
- Add cooked pasta, marinara sauce, sour cream, and pasta water and mix to combine.
- Add mozzarella and adjust seasoning as needed.
- Garnish with chopped parsley and enjoy warm.
- Store in the fridge for up to 5 days.
