Why buy take-out when you can put this flavor-packed meal together in 20-minutes?! This is a brand spanking new recipe and we’re adding this to our weeknight meal rotation. The secret to having this meal ready and on the table in 20 minutes is to buy pre-cut veggies from your grocery store and the Pad Thai noodles cook in 5 minutes. I used jumbo shrimp for this recipe, but you can use whatever protein you prefer.

20-Minute Pad Thai
Equipment
- Large non-stick pan
- Large non-stick pot
- Tongs
- Rubber spatula
Ingredients
- 8 oz Lotus Foods Pad Thai Rice Noodles
- 4-5 quarts water (for noodles)
- 2 tbsp avocado oil
- 2 tbsp butter
- 2 large eggs
- 1 lb Jumbo shrimp, peeled and deveined I like the Wild Argentinian frozen shrimp from Trader Joe's
- 1 cup baby broccoli, chopped
- 1 cup carrot and broccoli slaw I purchase mine from Trader Joe's
- 1/3 cup coconut aminos or gluten-free tamari soy sauce
- 2 tbsp toasted sesame seed oil
- 1 tbsp maple syrup or raw honey
- 1 tbsp fish sauce
- sea salt and pepper for seasoning
- 1 lime, cut into wedges for garnish
- 1 tbsp cashews, chopped for garnish
- 1/4 cup chopped green onions for garnish
Instructions
- In a large pot, boil noodles according to package instructions.
- In a large non-stick skillet, over medium heat, add oil and butter and heat until butter is melted.
- In a small bowl, scramble eggs and season with a pinch of sea salt and pepper, then add to the skillet and use a rubber spatula to scramble the eggs.
- Add thawed shrimp to the skillet and cook for 3-4 mins or until shrimp is cooked through.
- Add broccoli and slaw and mix to combine. Cook until veggies are tender, another 2-3 minutes.
- Add coconut aminos, sesame seed oil, fish sauce and maple syrup then mix to combine.
- Add noodles and use tongs to incorporate the noodles into the sauce and veggies. Transfer to a large bowl and season with cashews, green onions, and serve with slices of lime.
