Pumpkin Spice Pancakes (Gluten free)

This one’s a recipe hack using Trader Joe’s Gluten free Buttermilk Pancake and Waffle Mix. We made this for breakfast this morning, and we loved it! Willow had seconds and I had to put half of the pancakes away to stop us from eating all of it.

They’re simple to make, and they turn out light and fluffy too. You can find all the ingredients at your local Trader Joe’s store.

Pumpkin Spice Pancakes (Gluten free, Dairy Free)

Ingredients

  

  • 1 Box Trader Joe’s Gluten Free Buttermilk Pancake Mix
  • 1 ½ tsp pumpkin spice
  • 2 large eggs
  • 1 ½ cups oatmilk or milk of choice
  • 1 cup pumpkin puree
  • ¼ cup maple syrup +more for serving
  • ¼ cup avocado oil
  • Grain free granola garnish
  • Butter garnish

Instructions

 

  • Pre-heat a large non-stick skillet over medium to medium-low heat. Lightly grease the pan with non-stick spray or butter.
  • In a large bowl, whisk eggs together, add milk, maple syrup, pumpkin puree, & avocado oil, then whisk until smooth.
  • Add pancake mix and pumpkin spice, then mix thoroughly to combine. Make sure there are no lumps.
  • Using an ice cream scoop or ladle batter into the pan. Cook for about 1 minute on each side or until light golden brown.
  • Serve with butter, granola, and maple syrup.
