If you haven’t made any Mother’s Day plans this Sunday, stop what you’re doing and keep reading for the the easiest Brunch Board that will make any mom feel super special and loved. Since we eat with our eyes first, it only makes sense to throw the best brunch staples on a large cutting board and make it look aesthetically pleasing – am I right or am I right?!
And without further ado, here’s how to plan and make the best brunch board for your mom, wife, daughter or friend. Pro-tip: a lot of this can be made a day ahead, and since it’s Friday, you still have time to head to the grocery store and crack the whip on this board!

MOTHER’S DAY BRUNCH BOARD:
Belgian Waffles: I used Birch Benders Keto and Paleo Pancake Mix, which you can purchase from Sprouts, Costco, Target, Whole Foods, or Amazon. I made 2 batches (8-10 round waffles) of the pancake mix and added 2 tablespoons of coconut sugar to the batter. Use your waffle maker to make these the day of the event and place on the cutting board when done.
Bacon Strips: To make a large batch ( I made 1-dozen) and to avoid all the messy clean-up, Place the bacon on a large sheet pan covered with parchment paper, and bake for 15-20 minutes in the oven at 400F degrees. Keep a close watch on the bacon at the 15 minute mark to make sure they don’t burn. Remove from the pan and place on a paper towel lined plate to absorb the excess oil, then place on the cutting board.
Soft Boiled Eggs: Place 4 eggs in a small pot, fill with cold water until eggs are fully covered in water then bring to a boil. Once the water is boiling, turn off the heat and allow the eggs to sit in the pot for 5 minutes, then remove and place in a bowl with cold water to cool down the eggs. Once the eggs are cool, peel the shell under cold running water, then cut in half and garnish with your favorite seasoning. I used Furikake seasoning from Trader Joe’s – it’s the best.
Fruit Galore: Organizing strawberries, blueberries, blackberries, and cherries are filled with vitamin-C and antioxidants and are low in sugar, so pile them up on your board!
Eat your greens: Persian cucumbers and yellow zucchini are sliced thinly with a mandolin and seasoned with salt, pepper, and a drizzle of olive oil. Vegetables with every meal is a must around here.
Avocados: Because who doesn’t love avocados for brunch? Season with sea salt and lemon to keep them nice and green.
Yogurt Bowl: There are so many dairy-free alternative yogurt options now, so serve your favorite! I bought the grass-fed plain yogurt from Trader Joe’s, garnished with Purely Elizabeth’s Granola, and more berries.
Condiments: Maple Syrup, butter (not pictured, because I couldn’t fit it on the board!), mini-chocolate chips, and pecans, because brunch isn’t complete without them.
