As a way to celebrate the weekend, we love making brunch at home. And often times, you’ll see me on Instagram Stories whipping up pancakes or waffles. And this pancake/waffle recipe is legit my friends! I usually make a double batch, because we scarf these down like there’s no tomorrow.

Cassava Flour Waffles
A quick and easy go-to waffle or pancake recipe for any day of the week – especially the weekend!
Equipment
- Waffle maker
- Large mixing bowl
- Measuring cups
- Measuring spoons
- Whisk
- Rubber spatula
- Spatula
- Pastry brush
Ingredients
- 1 ½ cups Otto's Naturals – Cassava flour (do not use tapioca starch)
- 2 ¼ teaspoon baking powder
- 1 tsp cinnamon
- 1 teaspoon salt
- 1 cup coconut milk (or any nut milk)
- 1/4 cup fresh lemon juice
- 2 large eggs
- 2 tbsp avocado oil (plus more for greasing the waffle iron)
- 2 tbsp maple syrup (plus more for serving)
- 1 tsp pure vanilla extract
- Fresh berries for garnish
Instructions
- Preheat your waffle iron according to package instructions and set to medium heat. I set my All Clad waffle iron to level 4 out of 7.
- Using a large glass measuring cup, add milk and lemon juice, and allow the mixture to sit for 5 minutes.
- In a large mixing bowl, sift all dry ingredients together. Create a well in the middle of the dry ingredients.
- Add the eggs, avocado oil, maple syrup, and vanilla extract to the center of the well, then mix the center of the wet ingredients with a whisk. Carefully add the milk mixture and begin to whisk from the center of the bowl and outwards to incorporate the cassava flour. Use a rubber spatula to finish mixing and allow the batter to rest for another 4-5 minutes.
- Lightly grease the waffle iron with avocado oil using a pasty brush. Using a 2" cookie/ice cream scooper or a 1/3 cup measuring cup, add 1 heaping scoop to each cavity of the waffle iron. My waffle iron has 2 cavities, so I can only make 2 waffles at a time. Cook until golden brown.
- Garnish with salted butter, maple syrup and fresh berries and enjoy!
